Description

A healthy and protein-packed snack made with cottage cheese and eggs.


Ingredients

Scale
  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (spinach, bell peppers, etc.)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese and eggs, and whisk until smooth.
  3. Add the shredded cheese and chopped vegetables to the mixture.
  4. Season with salt and pepper to taste.
  5. Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
  7. Let them cool for a few minutes before removing from the muffin tin.
  8. Enjoy warm or store in the refrigerator for a quick snack!
