Ingredients

- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup chopped vegetables (spinach, bell peppers, etc.)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cottage cheese and eggs, and whisk until smooth.
- Add the shredded cheese and chopped vegetables to the mixture.
- Season with salt and pepper to taste.
- Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
- Let them cool for a few minutes before removing from the muffin tin.
- Enjoy warm or store in the refrigerator for a quick snack!
