A healthy and protein-packed twist on traditional lasagna, featuring creamy cottage cheese and rolled pasta.
Ingredients

- 9 lasagna noodles
- 2 cups cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a bowl, mix together cottage cheese, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Take a lasagna noodle, spread a portion of the cheese mixture on it, and roll it up.
- Place the rolled noodles seam-side down in the baking dish.
- Pour the remaining marinara sauce over the top of the rolled noodles.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add vegetables like spinach or zucchini for extra nutrition.
- Can be made ahead of time and stored in the refrigerator before baking.
- For a spicier version, add red pepper flakes to the cheese mixture.
