30 Minutes Authentic Mexican Rice

Description

A quick and easy recipe for authentic Mexican rice that can be made in just 30 minutes.


Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1 tomato, diced
  • 2 cups chicken broth
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 cup peas (optional)
  • 1/4 cup carrots, diced (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the chopped onion and sauté until translucent.
  4. Stir in the minced garlic and diced tomato, cooking for another minute.
  5. Add the rinsed rice to the skillet and stir to coat with the oil and vegetables.
  6. Pour in the chicken broth, cumin, and salt; bring to a boil.
  7. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.
  8. If using, add peas and carrots during the last 5 minutes of cooking.
  9. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Notes

  • For a spicier version, add chopped jalapeños.
  • Can be served with cilantro for added flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
