A quick and easy recipe for authentic Mexican rice that can be made in just 30 minutes.
Ingredients

- 1 cup long-grain white rice
- 2 tablespoons vegetable oil
- 1/4 cup onion, finely chopped
- 1 clove garlic, minced
- 1 tomato, diced
- 2 cups chicken broth
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 cup peas (optional)
- 1/4 cup carrots, diced (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large skillet, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and diced tomato, cooking for another minute.
- Add the rinsed rice to the skillet and stir to coat with the oil and vegetables.
- Pour in the chicken broth, cumin, and salt; bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.
- If using, add peas and carrots during the last 5 minutes of cooking.
- Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
Notes
- For a spicier version, add chopped jalapeños.
- Can be served with cilantro for added flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
