A quick and delicious recipe for coconut crusted fish that is crispy and golden.
Ingredients

- 1 lb white fish fillets
- 1 cup shredded coconut
- 1/2 cup breadcrumbs
- 2 eggs
- 1/4 cup flour
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow dish, mix the shredded coconut and breadcrumbs.
- In another dish, beat the eggs.
- Season the fish fillets with salt and pepper.
- Dredge each fillet in flour, dip in the beaten eggs, and then coat with the coconut-breadcrumb mixture.
- Heat oil in a skillet over medium heat.
- Fry the fish fillets for about 3-4 minutes on each side until golden brown.
- Transfer the fish to a baking sheet and bake in the oven for an additional 10 minutes.
- Serve hot with your favorite dipping sauce.
Notes
- For extra flavor, add spices to the coconut-breadcrumb mixture.
- Serve with a side of salad or rice.
