A quick and easy recipe for a delicious chicken tortellini dish made in a crockpot.

- 1 pound of chicken breast
- 2 cups of chicken broth
- 1 package of cheese tortellini
- 1 cup of diced tomatoes
- 1 cup of spinach
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
Instructions
- Place the chicken breast in the crockpot.
- Add the chicken broth, diced tomatoes, and Italian seasoning.
- Cook on low for 4 hours or high for 2 hours.
- Shred the chicken and return it to the crockpot.
- Add the tortellini and spinach, and cook for an additional 10-15 minutes until the tortellini is tender.
- Season with salt and pepper to taste before serving.
Notes
- This recipe can be made gluten-free by using gluten-free tortellini.
- Feel free to add other vegetables like bell peppers or zucchini.
- Leftovers can be stored in the refrigerator for up to 3 days.
