Description

Delicious and healthy snack recipe for fall packed with protein.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup rolled oats
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a mixing bowl, combine pumpkin puree, rolled oats, almond butter, and honey or maple syrup.
  2. Add cinnamon, nutmeg, and salt to the mixture and stir until well combined.
  3. If desired, fold in chocolate chips.
  4. Refrigerate the mixture for about 30 minutes to firm up.
  5. Once chilled, scoop out small portions and roll them into bite-sized balls.
  6. Store in an airtight container in the refrigerator.
