- 2 lbs chicken breasts
- 1 can (15 oz) corn, drained
- 1 cup salsa
- 1 cup cream cheese
- 1 cup shredded cheese (cheddar or Mexican blend)
Instructions
- Place the chicken breasts in the slow cooker.
- Add the drained corn and salsa on top of the chicken.
- Cut the cream cheese into cubes and add it to the slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the slow cooker and stir in the shredded cheese.
- Serve warm, garnished with fresh cilantro if desired.

- For a spicier version, use a spicy salsa.
- This dish pairs well with rice or tortillas.
