Description

A simple and delicious recipe for street corn chicken made in a slow cooker with just five ingredients.


Ingredients

  • 2 lbs chicken breasts
  • 1 can (15 oz) corn, drained
  • 1 cup salsa
  • 1 cup cream cheese
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the drained corn and salsa on top of the chicken.
  3. Cut the cream cheese into cubes and add it to the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, shred the chicken in the slow cooker and stir in the shredded cheese.
  6. Serve warm, garnished with fresh cilantro if desired.
