Ingredients

- 1/2 cup rolled oats
- 1/2 cup milk (or dairy-free alternative)
- 1/4 cup grated carrots
- 1 tablespoon maple syrup (or honey)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon raisins (optional)
- 1 tablespoon chopped walnuts (optional)
Instructions
- In a jar or bowl, combine the rolled oats and milk.
- Add the grated carrots, maple syrup, cinnamon, and nutmeg. Stir well to combine.
- If desired, mix in raisins and walnuts.
- Cover and refrigerate overnight (or for at least 4 hours).
- In the morning, give it a good stir and enjoy your carrot cake overnight oats!
Notes
- For a creamier texture, use yogurt in place of some of the milk.
- Feel free to adjust the sweetness to your liking.
