Description

A quick, healthy, and delicious vegan alternative to traditional tuna salad made with chickpeas.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, mash the chickpeas with a fork until flaky but not completely smooth.
  2. Add the vegan mayonnaise, Dijon mustard, diced celery, diced red onion, and lemon juice to the bowl.
  3. Mix everything together until well combined.
  4. Season with salt and pepper to taste.
  5. Serve immediately on bread, in a wrap, or over a salad.
