Ingredients

- 1 cup pumpkin puree
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup rolled oats
- 1/4 cup protein powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, almond butter, and honey or maple syrup until smooth.
- Add the rolled oats, protein powder, cinnamon, nutmeg, and salt to the mixture and stir until well combined.
- If using, fold in the dark chocolate chips.
- Line a muffin tin with cupcake liners and fill each liner with the mixture.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- These cups can be frozen for longer storage.
