- 2 large russet potatoes

Instructions
- Peel and cut the russet potatoes into thin fries.
- Soak the fries in cold water for at least 30 minutes to remove excess starch.
- Drain and pat the fries dry with a towel.
- In a large bowl, toss the fries with olive oil, salt, and pepper.
- Preheat the air fryer to 400°F (200°C).
- Place the fries in the air fryer basket in a single layer.
- Cook for 15-20 minutes, shaking the basket halfway through for even cooking.
- Once crispy, remove the fries and toss them with Parmesan cheese and truffle oil.
