- 1 cup apple cider
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 cloves garlic, minced

- Salt and pepper to taste
- 1 cup apple slices
- 1 tablespoon Dijon mustard
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet.
- Cook chicken for about 5-7 minutes on each side until golden brown.
- Remove chicken from the skillet and set aside.
- Add sliced onion and garlic to the skillet, sautéing until softened.
- Pour in apple cider and stir in Dijon mustard and thyme.
- Return chicken to the skillet and add apple slices.
- Simmer for 10-15 minutes until chicken is cooked through and sauce has thickened.
- Serve warm, garnished with fresh thyme if desired.
