- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups apples, peeled and diced
- 1 teaspoon cinnamon
- 1/2 cup brown sugar
- 1/2 cup oats
- 1/4 cup flour
- 1/4 cup butter, softened
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cheesecake pans.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
- In a separate bowl, combine diced apples, cinnamon, and brown sugar. Set aside.
- Pour the cream cheese mixture over the crust in the mini pans.
- Top with the apple mixture.
- In a small bowl, mix oats, flour, and softened butter to create a crumb topping. Sprinkle over the apples.
- Bake for 20-25 minutes or until the center is set.
- Let cool before removing from pans and serving.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- These can be made a day in advance and stored in the refrigerator.
- Serve with whipped cream for added indulgence.
