Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/4 cup flour
  • 1/4 cup butter, softened

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cheesecake pans.
  3. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, combine diced apples, cinnamon, and brown sugar. Set aside.
  5. Pour the cream cheese mixture over the crust in the mini pans.
  6. Top with the apple mixture.
  7. In a small bowl, mix oats, flour, and softened butter to create a crumb topping. Sprinkle over the apples.
  8. Bake for 20-25 minutes or until the center is set.
  9. Let cool before removing from pans and serving.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • These can be made a day in advance and stored in the refrigerator.
  • Serve with whipped cream for added indulgence.
