Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, and mix until just combined.
- Fold in the diced apples gently.
- Divide the batter evenly among the cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, whip the heavy cream until soft peaks form, then gradually add the caramel sauce and sea salt, mixing until well combined.
- Frost the cooled cupcakes with the creamy salted caramel frosting and drizzle with additional caramel sauce if desired.
