  • 2 cups peeled and sliced apples
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup butter
  • 1 cup apple pie filling
  • 1/2 cup caramel sauce
  • 1 cup whipped cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt the butter over medium heat and add the sliced apples, brown sugar, and cinnamon. Cook until the apples are tender.
  3. Place a few spoonfuls of the apple mixture in the center of each tortilla and roll them up.
  4. Arrange the rolled tortillas in a greased baking dish.
  5. Pour the apple pie filling over the top of the enchiladas.
  6. Drizzle caramel sauce over the enchiladas.
  7. Bake in the preheated oven for 20-25 minutes until heated through.
  8. Serve warm with whipped cream on the side.
