A delightful fall recipe featuring sweet potatoes stuffed with spiced apples.
Ingredients

- 4 medium sweet potatoes
- 2 apples, peeled and diced
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 2 tablespoons butter
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork.
- Bake the sweet potatoes for about 45 minutes or until tender.
- While the sweet potatoes are baking, melt the butter in a skillet over medium heat.
- Add the diced apples, brown sugar, cinnamon, nutmeg, and salt to the skillet.
- Cook until the apples are soft, about 5-7 minutes.
- Stir in the raisins and walnuts, and cook for an additional 2 minutes.
- Once the sweet potatoes are done, let them cool slightly, then slice them open.
- Stuff the sweet potatoes with the apple mixture.
- Serve warm and enjoy!
Notes
- For a vegan option, substitute butter with coconut oil.
- Feel free to add other nuts or dried fruits as desired.
