Ingredients

  • 4 medium sweet potatoes
  • 2 apples, peeled and diced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 2 tablespoons butter
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them with a fork.
  3. Bake the sweet potatoes for about 45 minutes or until tender.
  4. While the sweet potatoes are baking, melt the butter in a skillet over medium heat.
  5. Add the diced apples, brown sugar, cinnamon, nutmeg, and salt to the skillet.
  6. Cook until the apples are soft, about 5-7 minutes.
  7. Stir in the raisins and walnuts, and cook for an additional 2 minutes.
  8. Once the sweet potatoes are done, let them cool slightly, then slice them open.
  9. Stuff the sweet potatoes with the apple mixture.
  10. Serve warm and enjoy!

  • For a vegan option, substitute butter with coconut oil.
