- 1 ripe avocado
- 1 cup all-purpose gluten-free flour
- 1/2 cup sugar
- 1/2 cup chocolate chips
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder

- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe avocado until smooth.
- Add the sugar, eggs, and vanilla extract to the mashed avocado and mix well.
- In another bowl, combine the gluten-free flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
