A simple and delicious recipe for baked eggs layered with flaky pastry.
Ingredients

- 4 large eggs
- 1 sheet of puff pastry
- 1 cup of spinach, chopped
- 1/2 cup of cheese (cheddar or your choice)
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry and cut it into squares.
- Place the pastry squares on a baking sheet lined with parchment paper.
- In a skillet, heat olive oil and sauté the chopped spinach until wilted.
- Place a spoonful of sautéed spinach on each pastry square.
- Crack an egg on top of the spinach on each square.
- Sprinkle cheese, salt, and pepper over the eggs.
- Bake in the preheated oven for 20-25 minutes or until the eggs are set and the pastry is golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
- Feel free to add other vegetables or meats to the filling.
- For a richer flavor, use a mix of cheeses.
- Serve with a side salad for a complete meal.
