Ingredients

  • 4 large eggs
  • 1 sheet of puff pastry
  • 1 cup of spinach, chopped
  • 1/2 cup of cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon of olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry and cut it into squares.
  3. Place the pastry squares on a baking sheet lined with parchment paper.
  4. In a skillet, heat olive oil and sauté the chopped spinach until wilted.
  5. Place a spoonful of sautéed spinach on each pastry square.
  6. Crack an egg on top of the spinach on each square.
  7. Sprinkle cheese, salt, and pepper over the eggs.
  8. Bake in the preheated oven for 20-25 minutes or until the eggs are set and the pastry is golden brown.
  9. Remove from the oven and let cool slightly before serving.
