- 200g orzo pasta
- 200g feta cheese
- 150g fresh spinach
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano

- 500ml vegetable broth
- Parmesan cheese for serving (optional)
Instructions
- Preheat your oven to 200°C (400°F).
- In a large oven-safe pan, heat olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the orzo pasta and stir for a couple of minutes.
- Pour in the vegetable broth and bring to a simmer.
- Add the spinach, feta cheese, oregano, salt, and pepper, stirring to combine.
- Transfer the pan to the preheated oven and bake for 20-25 minutes, or until the orzo is cooked and the feta is golden.
- Remove from the oven, stir well, and serve with grated Parmesan cheese if desired.
