  • 500ml vegetable broth
  • Parmesan cheese for serving (optional)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large oven-safe pan, heat olive oil over medium heat and sauté the minced garlic until fragrant.
  3. Add the orzo pasta and stir for a couple of minutes.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add the spinach, feta cheese, oregano, salt, and pepper, stirring to combine.
  6. Transfer the pan to the preheated oven and bake for 20-25 minutes, or until the orzo is cooked and the feta is golden.
  7. Remove from the oven, stir well, and serve with grated Parmesan cheese if desired.
