Description

Flavorful and nutritious Baked Greek Lentil Meatballs combine lentils, fresh herbs, and Mediterranean spices, perfect for families and gatherings.


Ingredients

  • 1 cup green lentils
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1/2 cup tzatziki sauce (for serving)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the lentils in boiling water until tender, about 20 minutes. Drain and let cool.
  3. Combine cooked lentils, onion, garlic, carrot, parsley, oregano, cumin, salt, pepper, breadcrumbs, and olive oil in a large bowl. Mix well.
  4. Form the mixture into small meatballs and place on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes or until golden brown and crispy.
  6. Serve hot with tzatziki sauce.
