- 1 cup green lentils
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup breadcrumbs
- 1 tablespoon olive oil
- 1/2 cup tzatziki sauce (for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the lentils in boiling water until tender, about 20 minutes. Drain and let cool.
- Combine cooked lentils, onion, garlic, carrot, parsley, oregano, cumin, salt, pepper, breadcrumbs, and olive oil in a large bowl. Mix well.
- Form the mixture into small meatballs and place on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until golden brown and crispy.
- Serve hot with tzatziki sauce.
Notes
