Description

A delightful and healthy side dish featuring baked potatoes with lemon, thyme, and feta cheese, perfect for spring dinners.


Ingredients

Scale
  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 1 lemon, zested and juiced
  • 2 teaspoons fresh thyme leaves
  • 1 cup feta cheese, crumbled
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then place them in a large bowl.
  3. In a separate bowl, whisk together the olive oil, lemon zest, lemon juice, thyme, salt, and pepper.
  4. Pour the mixture over the potatoes and toss to coat evenly.
  5. Spread the potatoes on a baking sheet in a single layer.
  6. Bake for 25-30 minutes, or until the potatoes are tender and golden brown.
  7. Remove from the oven and sprinkle the crumbled feta cheese on top.
  8. Return to the oven for an additional 5 minutes to warm the feta.
  9. Serve warm and enjoy!
