Ingredients

- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1 lemon, zested and juiced
- 2 teaspoons fresh thyme leaves
- 1 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes, then place them in a large bowl.
- In a separate bowl, whisk together the olive oil, lemon zest, lemon juice, thyme, salt, and pepper.
- Pour the mixture over the potatoes and toss to coat evenly.
- Spread the potatoes on a baking sheet in a single layer.
- Bake for 25-30 minutes, or until the potatoes are tender and golden brown.
- Remove from the oven and sprinkle the crumbled feta cheese on top.
- Return to the oven for an additional 5 minutes to warm the feta.
- Serve warm and enjoy!
