Description

A delicious and comforting baked penne dish featuring sausage and spinach, perfect for a spring dinner.


Ingredients

  • 12 ounces penne pasta
  • 1 pound Italian sausage, casings removed
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the penne pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet, cook the Italian sausage over medium heat until browned, breaking it up with a spoon.
  4. Add the chopped spinach to the skillet and cook until wilted.
  5. In a large bowl, combine the cooked pasta, sausage and spinach mixture, ricotta cheese, marinara sauce, Italian seasoning, salt, and pepper.
  6. Transfer the mixture to a greased baking dish and top with mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
