Description

Delicious baked chicken meatballs infused with sage, served over creamy Parmesan orzo.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tbsp fresh sage, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup additional Parmesan cheese for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, sage, garlic, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes or until cooked through.
  5. Meanwhile, in a saucepan, bring chicken broth to a boil and add orzo. Cook according to package instructions.
  6. Once the orzo is cooked, stir in heavy cream and additional Parmesan cheese.
  7. Serve the meatballs over the creamy Parmesan orzo.

Notes

  • For a lighter version, use ground turkey instead of chicken.
  • Feel free to add more herbs to the meatball mixture for extra flavor.
