Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, basil, salt, and pepper.
  2. Add chicken breasts to the marinade and let sit for at least 30 minutes.
  3. While the chicken is marinating, boil the potatoes in salted water until tender.
  4. Drain the potatoes and return them to the pot.
  5. Add milk, butter, and parsley to the potatoes and mash until smooth and creamy.
  6. Preheat the grill to medium-high heat.
  7. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
  8. Serve the grilled chicken alongside the herbed mashed potatoes.
