Delicious and festive truffles inspired by classic banana pudding, perfect for Easter celebrations.
Ingredients

- 1 cup vanilla wafer crumbs
- 1/2 cup powdered sugar
- 1/2 cup cream cheese, softened
- 1 ripe banana, mashed
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
- Mini marshmallows for garnish
Instructions
- In a mixing bowl, combine vanilla wafer crumbs, powdered sugar, cream cheese, mashed banana, and vanilla extract until well blended.
- Chill the mixture in the refrigerator for about 30 minutes to firm up.
- Once chilled, scoop out small portions and roll them into balls.
- In a microwave-safe bowl, melt white chocolate chips and coconut oil together until smooth.
- Dip each truffle into the melted chocolate, allowing excess to drip off.
- Place the truffles on a parchment-lined baking sheet and garnish with mini marshmallows.
- Refrigerate until the chocolate is set, then serve and enjoy!
