Description

Delicious and festive truffles inspired by classic banana pudding, perfect for Easter celebrations.


Ingredients

  • 1 cup vanilla wafer crumbs
  • 1/2 cup powdered sugar
  • 1/2 cup cream cheese, softened
  • 1 ripe banana, mashed
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil
  • Mini marshmallows for garnish

Instructions

  1. In a mixing bowl, combine vanilla wafer crumbs, powdered sugar, cream cheese, mashed banana, and vanilla extract until well blended.
  2. Chill the mixture in the refrigerator for about 30 minutes to firm up.
  3. Once chilled, scoop out small portions and roll them into balls.
  4. In a microwave-safe bowl, melt white chocolate chips and coconut oil together until smooth.
  5. Dip each truffle into the melted chocolate, allowing excess to drip off.
  6. Place the truffles on a parchment-lined baking sheet and garnish with mini marshmallows.
  7. Refrigerate until the chocolate is set, then serve and enjoy!
