A delicious and easy BBQ chicken casserole perfect for springtime family dinners.
Ingredients

- 2 cups cooked shredded chicken
- 1 cup BBQ sauce
- 1 cup corn
- 1 cup black beans, drained and rinsed
- 2 cups cooked rice
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup diced red onion
- 1/2 cup chopped bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, BBQ sauce, corn, black beans, cooked rice, half of the cheese, red onion, bell pepper, garlic powder, and onion powder.
- Mix well until all ingredients are evenly coated.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
