Ingredients

- 500g beef, diced
- 300ml ale
- 2 large parsnips, peeled and chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 500ml beef stock
- 2 tablespoons flour
- 1 teaspoon thyme
- Salt and pepper to taste
- 200g suet pastry
Instructions
- Preheat the oven to 180°C (350°F).
- In a large pot, brown the diced beef over medium heat.
- Add the onion, carrots, and garlic, cooking until softened.
- Stir in the flour and cook for another minute.
- Add the ale and beef stock, bringing to a simmer.
- Add the parsnips and thyme, season with salt and pepper, and cook for 10 minutes.
- Transfer the mixture to a baking dish.
- Roll out the suet pastry and cover the beef mixture, sealing the edges.
- Bake in the preheated oven for 1 hour or until the pastry is golden brown.
- Let it cool slightly before serving.
Notes
- For a richer flavor, use a stout ale.
- Feel free to add other root vegetables like potatoes or turnips.
- This dish can be made ahead of time and reheated.
