A hearty and flavorful comfort dish that combines tender beef, rich ale, and sweet parsnips in a delicious pudding.


Ingredients

  • 500g beef, diced
  • 300ml ale
  • 2 large parsnips, peeled and chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 500ml beef stock
  • 2 tablespoons flour
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 200g suet pastry

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, brown the diced beef over medium heat.
  3. Add the onion, carrots, and garlic, cooking until softened.
  4. Stir in the flour and cook for another minute.
  5. Add the ale and beef stock, bringing to a simmer.
  6. Add the parsnips and thyme, season with salt and pepper, and cook for 10 minutes.
  7. Transfer the mixture to a baking dish.
  8. Roll out the suet pastry and cover the beef mixture, sealing the edges.
  9. Bake in the preheated oven for 1 hour or until the pastry is golden brown.
  10. Let it cool slightly before serving.

Notes

  • For a richer flavor, use a stout ale.
  • Feel free to add other root vegetables like potatoes or turnips.
  • This dish can be made ahead of time and reheated.
