A hearty and comforting beef and stout pie, perfect for celebrating St. Patrick’s Day.
Ingredients

- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 2 cups stout beer
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 package puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large pot, brown the beef cubes over medium heat.
- Add the onion, carrots, and garlic, cooking until softened.
- Stir in the stout, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours until the beef is tender.
- Transfer the beef mixture to a pie dish.
- Roll out the puff pastry and cover the beef mixture, sealing the edges.
- Brush the pastry with the beaten egg.
- Bake for 25-30 minutes or until the pastry is golden brown.
