Description

A hearty and comforting beef and stout pie, perfect for celebrating St. Patrick’s Day.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 2 cups stout beer
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large pot, brown the beef cubes over medium heat.
  3. Add the onion, carrots, and garlic, cooking until softened.
  4. Stir in the stout, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours until the beef is tender.
  6. Transfer the beef mixture to a pie dish.
  7. Roll out the puff pastry and cover the beef mixture, sealing the edges.
  8. Brush the pastry with the beaten egg.
  9. Bake for 25-30 minutes or until the pastry is golden brown.
