Ingredients

- 8 oz udon noodles
- 1 lb beef sirloin, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 2 cups mixed spring vegetables (like bell peppers, snap peas, and carrots)
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the sliced beef and stir-fry until browned, about 3-4 minutes.
- Add the garlic and ginger, cooking for an additional minute until fragrant.
- Stir in the mixed spring vegetables and cook until just tender, about 2-3 minutes.
- Add the cooked udon noodles, soy sauce, and oyster sauce, tossing everything together until well combined and heated through.
- Season with salt and pepper to taste, and garnish with chopped green onions before serving.
