Ingredients

- 4 medium beets, roasted and sliced
- 4 oz goat cheese, crumbled
- 4 cups mixed greens
- 1/4 cup walnuts, toasted
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast for about 45 minutes or until tender.
- Let the beets cool, then peel and slice them.
- In a large bowl, combine the mixed greens, sliced beets, and walnuts.
- Drizzle with balsamic vinaigrette and toss gently to combine.
- Top with crumbled goat cheese and season with salt and pepper.
- Serve immediately and enjoy your fresh spring salad!
