Instructions
- Carefully slice each croissant in half lengthwise, leaving a small hinge so that the halves remain attached and easier to handle.
- In a mixing bowl, whip the heavy cream together with powdered sugar and vanilla extract until soft peaks form, ensuring a light and fluffy texture.
- In a separate bowl, beat the softened mascarpone or cream cheese until smooth to create a creamy base for the filling.
- Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy, taking care not to deflate the whipped cream.
- Spread a generous amount of the cream mixture onto the bottom half of each croissant, then top with the fresh mixed berries.
- Carefully close the croissants, dust with extra powdered sugar, and garnish with fresh mint leaves if desired.
- Serve immediately for the best texture or refrigerate up to 2 hours to chill before serving. Optionally, drizzle with honey or melted white chocolate, or lightly toast croissants before filling for a warm variation.
