Description

Delicious flaky croissants filled with whipped cream and a medley of fresh berries, perfect for brunch or dessert.


Ingredients

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone or cream cheese (softened)
  • 1 cup mixed fresh berries (such as strawberries, blueberries, raspberries, or blackberries)
  • Extra powdered sugar for dusting (optional)
  • Fresh mint for garnish (optional)


Instructions

  1. Carefully slice each croissant in half lengthwise, leaving a small hinge so that the halves remain attached and easier to handle.
  2. In a mixing bowl, whip the heavy cream together with powdered sugar and vanilla extract until soft peaks form, ensuring a light and fluffy texture.
  3. In a separate bowl, beat the softened mascarpone or cream cheese until smooth to create a creamy base for the filling.
  4. Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy, taking care not to deflate the whipped cream.
  5. Spread a generous amount of the cream mixture onto the bottom half of each croissant, then top with the fresh mixed berries.
  6. Carefully close the croissants, dust with extra powdered sugar, and garnish with fresh mint leaves if desired.
  7. Serve immediately for the best texture or refrigerate up to 2 hours to chill before serving. Optionally, drizzle with honey or melted white chocolate, or lightly toast croissants before filling for a warm variation.
