Description

A delightful dessert combining sweet blackberries, zesty lemon, and earthy thyme in a delicious square.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup fresh blackberries
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh thyme, chopped
  • 1/4 teaspoon baking powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine flour, powdered sugar, and salt in a bowl. Cut in the butter until the mixture resembles coarse crumbs. Press into the bottom of a greased 8×8 inch baking dish. Bake for 15 minutes.
  3. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and chopped thyme in another bowl. Stir in the blackberries, gently folding them into the mixture.
  4. Pour the blackberry mixture over the baked crust.
  5. Sprinkle baking powder over the top and bake for an additional 25-30 minutes, or until the center is set and the edges are lightly golden.
  6. Allow to cool before cutting into squares. Serve as a refreshing dessert.

Notes

Chill the butter for a flakier crust, and use fresh ingredients for the best flavor.
