Description

A delicious and easy-to-make breakfast quesadilla filled with fresh blueberries and cheese.


Ingredients

  • 2 flour tortillas
  • 1 cup fresh blueberries
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon honey
  • 1 teaspoon cinnamon

Instructions

  1. In a bowl, mix the cream cheese, honey, and cinnamon until well combined.
  2. Spread the cream cheese mixture evenly on one side of each tortilla.
  3. Sprinkle the fresh blueberries and mozzarella cheese over one of the tortillas.
  4. Top with the second tortilla, cream cheese side down.
  5. Heat a skillet over medium heat and cook the quesadilla for 3-4 minutes on each side, or until golden brown and the cheese is melted.
  6. Remove from heat, cut into wedges, and serve warm.

Notes

  • For added sweetness, drizzle with extra honey before serving.
  • Feel free to substitute with other berries if desired.
