Description

A delightful and creamy blueberry cheesecake perfect for spring gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh blueberries
  • ¼ cup sour cream


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  6. Gently fold in the blueberries and sour cream.
  7. Pour the cheesecake mixture over the crust in the springform pan.
  8. Bake for 50-60 minutes or until the center is set.
  9. Let it cool, then refrigerate for at least 4 hours before serving.
