- 1 cup all-purpose flour (crust)
- ½ cup unsalted butter, melted
- ¼ cup brown sugar
- ¼ teaspoon sea salt
- 2 large eggs
- ½ cup granulated sugar
- ½ teaspoon vanilla extract
- Zest of 1 lemon
- 1 cup unsweetened shredded coconut
- 1 tablespoon all-purpose flour
- 1½ cups fresh or frozen blueberries
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment, leaving overhang.
- Combine flour, melted butter, brown sugar, and salt in a bowl. Press into the pan and bake 12–14 minutes until lightly golden.
- In another bowl, whisk eggs, sugar, vanilla, and lemon zest. Fold in coconut, flour, then blueberries gently.
- Pour filling over hot crust, smooth gently. Bake 25–28 minutes until golden and set.
- Cool completely in the pan. Lift out with parchment and cut into squares. Store in fridge up to 5 days.
