Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, eggs, honey, and vanilla extract.
  3. Stir in the rolled oats, baking powder, cinnamon, and salt until well mixed.
  4. Gently fold in the fresh blueberries.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30-35 minutes or until the top is golden and set.
  7. Let it cool for a few minutes before serving.
