- ¾ cup cottage cheese
- 1 egg
- ½ teaspoon vanilla extract
- ¼ cup blueberries (fresh or frozen)
- Optional: 1 tablespoon almond flour
- Optional: ½ teaspoon sweetener of choice
- Optional: Pinch of cinnamon or lemon zest
Instructions
- Preheat oven to 350°F (175°C).
- Combine cottage cheese, egg, vanilla extract, and optional almond flour, sweetener, and cinnamon or lemon zest in a small bowl. Mix until smooth.
- Fold in blueberries gently, then pour the mixture into a ramekin or small oven-safe dish.
- Top with extra blueberries if desired.
- Bake for 25–28 minutes, until golden on top and just set in the center.
- Cool for 5 minutes and enjoy warm or chilled.
Notes
Experiment with flavors by substituting blueberries for other fruits. Store in the fridge for up to 3 days or freeze for 2 months.
