Description

Ingredients

  • 1 package cream cheese (8 oz)
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tbsp vanilla extract
  • 1 cup blueberries (for folding)
  • 1 tbsp lemon juice (for folding)
  • 2 loaves French bread, cubed
  • 2 cups milk
  • 8 large eggs
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 lemon zest + juice (2 tbsp juice)
  • 1 cup blueberries (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a large baking dish with butter or cooking spray.
  3. Beat together the cream cheese and powdered sugar until smooth.
  4. Add the milk and vanilla extract to the mixture, beating until fully incorporated.
  5. Fold in 1 cup of blueberries and 1 tablespoon of lemon juice.
  6. Whisk together the eggs, milk, cinnamon, nutmeg, lemon zest, and lemon juice (2 tablespoons) in a separate bowl.
  7. Layer half of the cubed French bread in the prepared baking dish.
  8. Spread the cream cheese mixture evenly over the bread layer.
  9. Top with the remaining half of the cubed bread.
  10. Pour the egg mixture over the top, ensuring all bread pieces are soaked.
  11. Cover the dish and refrigerate for at least 2 hours or overnight for best results.
  12. Remove from the fridge and let sit at room temperature for about 30 minutes before baking.
  13. Bake for 45–50 minutes or until the top is golden brown and the center is set.
  14. Remove from the oven and allow to cool slightly.
  15. Top with fresh blueberries before serving.

Notes

For a diabetic-friendly option, consider using sugar substitutes for powdered sugar.
