Description

A delicious and healthy recipe for braised collard greens, perfect for spring dinners.


Ingredients

  • 2 pounds collard greens, washed and chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Add the chopped collard greens to the pot and stir well.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Cover and cook for about 45 minutes, stirring occasionally.
  7. Stir in apple cider vinegar and season with salt and pepper before serving.
