A delicious and healthy recipe for braised collard greens, perfect for spring dinners.
Ingredients

- 2 pounds collard greens, washed and chopped
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic and cook for another minute.
- Add the chopped collard greens to the pot and stir well.
- Pour in the vegetable broth and bring to a simmer.
- Cover and cook for about 45 minutes, stirring occasionally.
- Stir in apple cider vinegar and season with salt and pepper before serving.
