Description

A delicious and healthy side dish perfect for spring, featuring tender collard greens braised to perfection.


Ingredients

Scale
  • 2 pounds collard greens, washed and chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the chopped collard greens to the pot and stir to combine.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Cover and cook for 30-40 minutes, or until the greens are tender.
  7. Stir in the apple cider vinegar and red pepper flakes, if using.
  8. Season with salt and pepper to taste before serving.
