  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Add the broccoli florets and cook for an additional 5-7 minutes.
  4. Using an immersion blender, blend the soup until smooth, or transfer to a blender in batches.
  5. Stir in the milk and shredded cheddar cheese until melted and well combined.
  6. Season with salt and pepper to taste. Serve hot.
