Instructions
- In a large pot, heat some oil over medium heat.
- Add the diced onion, carrots, and celery, and sauté until softened.
- Stir in the minced garlic, cumin, and paprika, cooking for another minute.
- Add the cooked chickpeas, uncooked rice, and vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer until the rice is cooked, about 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
