Ingredients

- 8 oz pasta (such as rotini or penne)
- 2 cups chopped Romaine lettuce
- 1/2 cup grated Parmesan cheese
- 1 cup croutons
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- Combine in a large bowl the cooked pasta, chopped romaine, grated Parmesan, and croutons.
- Whisk together in a separate bowl the mayonnaise, lemon juice, minced garlic, and Dijon mustard. Season with salt and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Serve immediately or chill in the refrigerator until ready to serve.
Notes
For a protein boost, add grilled chicken or chickpeas. Use homemade croutons for a fresher taste.
