- 12 oz rigatoni pasta
- 1 lb chicken breast, diced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the mozzarella cheese until melted and the sauce is creamy.
- Add the cooked rigatoni to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a spicier dish, add more Cajun seasoning or a pinch of cayenne pepper.
- This dish can be made ahead of time and reheated before serving.
