Description

Ingredients

  • 1 lb chicken breast, diced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Stir in the mozzarella cheese until melted and the sauce is creamy.
  5. Add the cooked rigatoni to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.
