- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, garlic, and green bell pepper; sauté until softened.
- Stir in the Cajun seasoning and cook for another minute.
- Add the soaked black-eyed peas, vegetable broth, and diced tomatoes to the pot.
- Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the peas are tender.
- Season with salt and pepper to taste before serving.

- For a spicier version, add diced jalapeños.
