Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the milk.
  4. In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
  5. In a small bowl, combine the brown sugar, 1/4 cup flour, 1/4 cup butter, and 1 tablespoon cinnamon to create the streusel topping. Mix until crumbly.
  6. Fill each muffin liner halfway with batter, add a spoonful of streusel, then top with more batter until 3/4 full.
  7. Sprinkle additional streusel on top of each muffin.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
