Ingredients

  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/2 pound imitation crab meat, shredded
  • 2 sheets nori, cut into strips
  • Soy sauce, for serving
  • Wasabi and pickled ginger, for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool.
  4. Once the rice is cool, divide it into bowls.
  5. Top each bowl with sliced avocado, julienned cucumber, and shredded imitation crab meat.
  6. Garnish with nori strips, and serve with soy sauce, wasabi, and pickled ginger.

  • Feel free to add other toppings like sesame seeds or radish.
