- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup ricotta cheese
- 1/2 cup powdered sugar
- 1/2 teaspoon cinnamon
- 1/4 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together flour, cocoa powder, baking powder, and salt.
- In another bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are firm.
- Let the cookies cool completely on a wire rack.
- In a separate bowl, mix ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips to make the filling.
- Once the cookies are cool, spread the cannoli filling on the flat side of one cookie and sandwich it with another cookie.
Notes
- For a more authentic flavor, use mascarpone cheese instead of ricotta.
- These cookies can be stored in an airtight container for up to a week.
- Feel free to add more chocolate chips or nuts to the filling for extra texture.
