Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup mini chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are firm.
  8. Let the cookies cool completely on a wire rack.
  9. In a separate bowl, mix ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips to make the filling.
  10. Once the cookies are cool, spread the cannoli filling on the flat side of one cookie and sandwich it with another cookie.
