A comforting pasta dish featuring sweet caramelized onions and a kick from chili oil.

- 12 oz Pasta (any type; gluten-free option available)
- 2 medium Onions (preferably sweet)
- 3 tablespoons Chili Oil (adjust to taste)
- 1 cup Cream (heavy or coconut cream for dairy-free)
- 3 cloves Garlic (minced)
Instructions
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente.
- Drain the pasta, reserving about 1 cup of pasta water.
- Slice the onions thinly for even caramelization.
- Heat a large skillet over medium heat and add a tablespoon of olive oil.
- Add the sliced onions to the skillet and stir to coat in the oil.
- Cook the onions for about 15-20 minutes, stirring occasionally, until they are deeply caramelized and golden brown.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the cream and add chili oil.
- Mix well to combine and bring to a gentle simmer.
- If needed, gradually add a bit of reserved pasta water to loosen the sauce to your desired consistency.
- Fold the cooked pasta into the sauce and toss until evenly coated.
- Season with salt and pepper to taste and serve immediately.
Notes
For a vegan version, substitute heavy cream with coconut cream.
