Ingredients

  • 1 cup shredded carrots
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup crushed pecans
  • 1/4 cup shredded carrots


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or non-stick spray.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Whisk together the all-purpose flour, baking soda, and salt in another bowl.
  6. Mix the dry ingredients into the wet mixture until just combined.
  7. Fold in the mashed bananas, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, ground all spice, and shredded carrots.
  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
