- 1/4 cup shredded carrots
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with butter or non-stick spray.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Whisk together the all-purpose flour, baking soda, and salt in another bowl.
- Mix the dry ingredients into the wet mixture until just combined.
- Fold in the mashed bananas, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, ground all spice, and shredded carrots.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Beat together the softened cream cheese and butter until smooth. Gradually add in the powdered sugar, vanilla extract, and ground cinnamon until well combined.
- Spread the cream cheese frosting generously on top of the cooled bread.
